Goat Cheese Muffins


Preparation for 12 muffins

Preparation time: 10 minutes

Cooking time: 20 minutes

Level: very easy


Ingredients:

150 g soft goat’s cheese

40 g dried sultanas

170 g Self raising flour

3 medium eggs

15 cl double cream

55 g unsalted butter

1/2 teaspoon baking powder

Fresh ground black pepper

30 g Pine nuts (optional)

Directions:

Preheat the oven to 180°c.

Sieve the flour and the baking powder together.

Gently melt the butter in a heavy-based saucepan (do not boil or burn)

Put the sieved flour into a mixing bowl and make a well in the flour – add the melted butter, eggs and cream, dried sultanas, ground black pepper and just a touch of salt (not too mush as the cheese is already salted), add the cheese cut to small bits and mix well together.

Fill 12 silicon muffin moulds.

Dry roast the pine nuts in a heavy-based frying pan but do not burn.

Sprinkle the pine nuts onto the muffins and cook for 25 minutes until lightly golden.

Great with an aperitif or a starter with slices of fresh, crisp pears and a green salad
